9:15 Breakfast: 3 eggs scrambled, 1/2 cup kale, 2.5 apple muffins
Paleo Apple Muffins2 cups coconut pulp (left over from making nut milk, I think I may use juice pulp in this too in the future) 1/4 cup almond flour 1/2 cup ground flax 1 banana 2 peach, apricot 1/4 cup kefir 1/4 cup coconut oil 1/2 cup water 1 tbsp psyllium husks 1/2 tsp baking soda 1/4 tsp salt 1 tsp cinnamon 1/4 tsp fresh nutmeg 1 tsp vanilla 1 large apple chopped fine 1/4 cup raisins 1/4 cup sliced almonds
Mash banana, slice all the fruit really fine. Beat eggs, melt oil, mix it all up. Bake at 350 for 20 minutes in oiled muffin tin or on a cookie sheet, 1/4 cup batter each.
This is a very loose recipe, I adjust the ingredients until it is a slightly thick muffin batter and tastes pretty good raw. Makes about 16 muffins/ large cookies.
10:30 3 more muffins. Wow, I feel a bit light headed after that. Drink some water and tea (dandelion, burdock and elderberry, very yummy)
12:30 1 slice deli turkey at the store. Ready for lunch now.
2:00 Lunch: 4 oz Salmon, 1 cup grilled veggies (zucchini, pepper, asparagus)
2:40 1 more muffin, they are so good! Though I’d like you all to note how many I’ve had so far. It is quite common for folks on a paleo diet to over eat on paleo treats. They may be made of diet friendly ingredients, but the combination of nuts and fruit as well as the familiar texture and flavor of baked goods seems to bring out any lingering binge behavior. I let myself do it from time to time, but I’m sure it’s not the best thing.
5:00 Half way through my second bottle of water for the day. My head is throbbing and I am exhausted. I read about the Whole 30, a simple approach to eating a paleo diet for 30 days to cleanse your body of inflammation and other unpleasant symptoms. They strongly recommend against paleo treats. It think I know why.
Ahh, how I love decharging. I sat and held a pot of dirt in my hands and asked the earth element to take away any negativity. After about 5 minutes I could feel the cloudy, heavy energy around my head leave. Who knows if it’s from food or the computer or whatever else I did today. It is gone and I feel refreshed.
5:30 psyllium and water
5:45 snack: salmon with capers and a few stalks of roasted asparagus. Not quite dinner but all I was hungry for.
6:45 Dinner (?) a bowl of mushroom soup with sour cream and saurkraut. The picture is from Sat when I made it and ate it with a hard boiled egg. Satisfying, though I still feel a burn in the back of my throat from munching on some raw calendula leaves in my back yard. Don’t recommend that, unless you need some extra heat in your throat.
Hydration: I’m shooting for a minimum of 100 oz. I’ve had about 3 28oz bottles of water, another 24oz with my psyllium and 16 oz of tea. That’s pretty close and I know I’ll have some more before bed.
